Bring the water to a boil, but not boiling (maintain a temperature of around 97°C), to ensure the vermicelli doesn't break easily.

Finally, use a clean bamboo pole to pick up the vermicelli that floats in the pot and put it into cold water to cool. After cooling, use the bamboo pole to wrap the vermicelli into a bundle and put it into the sour milk to soak for 3 to 4 minutes. Then pick it up and let it cool thoroughly. Then rinse it with clean water to prevent the vermicelli from sticking to each other.
