The Little Lucky Girl.

Chapter 29: Teaching my uncle and aunt to make snacks

After looking at the shop, Su Qing went to Yunkelai Restaurant for a stroll. It was time to collect the second month’s share!

Arriving at the Yunkelai Restaurant, Su Qing asked, "Boss, how is business now?"

"Qingbao, you're here! Business is booming! It's doubled compared to before! Qing girl, you really are my God of Wealth!"

"That's a must, hehe!" Su Qing replied proudly

"Qingbao, go upstairs and give you last month's share."

"Thank you, Uncle Wang!"

"Then I'll teach you another dish today!"

Let me teach you how to make Mapo Tofu!

He then went into the kitchen, rolled up his sleeves, washed his hands, and began preparing the ingredients:

Cut the tofu into small pieces and mince the pork.

Blanch the tofu cubes in boiling water and add a little salt. This will remove the beany smell and make the tofu firmer and less prone to breaking.

Add oil to the pan, add minced meat and stir-fry until it changes color, then add chopped onion, ginger and garlic and stir-fry until fragrant.

Add the bean paste and stir-fry over low heat until the red oil and aroma come out.

Add appropriate amount of water or chicken bone broth, add pepper powder and chili powder, and add secret soy sauce, sugar and salt for seasoning.

Gently place the blanched tofu cubes into the pot and cook over medium-low heat for about 5 minutes to allow the tofu to fully absorb the soup.

Add starch water in three batches to thicken the soup. Push gently after each addition to allow the soup to wrap around the tofu, increasing the viscosity and taste.

Sprinkle with chopped green onions or garlic sprouts before serving to enhance the aroma, then serve on a plate and enjoy.

The aroma fills the air right after it comes out of the pot, making everyone salivate!

Su Qing took advantage of the cover of the backpack and took out a large jar of broad bean paste and sweet potato starch, enough for the restaurant to use for a month.

He handed these to Shopkeeper Wang, "Uncle Shopkeeper, these two are my exclusive secret recipes!"

"I'll be very busy this month. My two shops are about to open! If you need anything, send someone to Sujia Village to find me. I'm leaving now!"

"Okay Qingbao, take care with your dad!" After saying that, he went to entertain the guests with a smile!

After Su Qing and Su Zhiyuan left the restaurant, they went to buy the ingredients needed to make dried fruits!

I bought peanuts, melon seeds, red dates, etc., and went to the pharmacy to buy spices: star anise, cinnamon, cloves, peppercorns, fennel, and bay leaves.

When Su Qing returned home, it was already noon. After a simple meal, he went to his uncle and aunt and said, "Uncle, aunt, the shop will be ready in seven or eight days. I will teach you how to make snacks and dried fruits in the next two days."

"Today I'm going to teach you two things: five-spice melon seeds and five-spice peanuts. I've bought all the ingredients today! Let's get started now."

"First, soak the peanuts in water with spices for half an hour. Remember which spices to use!

Now we start making the five-spice melon seeds. First, add the spices, melon seeds, salt, and water in a pot and cook for 25 minutes! After cooking, put it in a ventilated place to dry.

While the melon seeds are drying, take out the peanuts soaked in spices, add salt to the pan, and start stir-frying quickly! Then turn to low heat and stir-fry! When you smell the aroma, it's time to remove from the pan! Use a colander to sift out the peanuts!

"Uncle, aunt, please try it. Is it delicious?"

Uncle Su and his aunt tasted one and said, "It's so fragrant and delicious!"

"This is perfect for drinking. I'm selling half a pound for 50 wen because the spices are so expensive!"

"Next, the melon seeds are dried, and we start to fry them. Stir-frying five-spice melon seeds is similar to frying five-spice peanuts! Put the melon seeds in salt and fry until they smell fragrant, then remove from the pan! Use the same method to sift them out with a colander!

Try it, aren’t they better than ordinary melon seeds?

Also, don’t reuse the salt after it’s been used. Don’t be afraid of wasting it. Only when the food tastes good can it attract more customers!
