After the lard in the pot had shrunk by more than half and there wasn't much lard left, Zhou Yang used a spatula to press the lard down to make sure it was all rendered into cracklings before turning off the heat.
This time, instead of using an iron spoon, I simply added a filter screen to the earthenware pot and poured the lard directly in. Then, I poured the filtered lard residue into another basin to drain the oil.
