Sun-drying green tea often possesses a unique "sun-like" aroma, resulting in a richer, more mellow fragrance. Because the sun-drying process is relatively slow and natural, the chemical transformations within the tea are more complex and diverse, resulting in a richer flavor and excellent potential for later transformation. Yunnan's raw Pu'er tea, for example, incorporates sun-drying into its initial production process. Over time, the tea gradually reveals its unique charm through natural aging, evolving from astringent to full-bodied, from a single tea aroma to a rich and diverse aroma.
