Drying stage. Once the tea leaves have set, the heat should be kept low. The tea leaves dry quickly; if the heat is too strong, they will burn and turn yellow. Slowly rotate the tea leaves in the pot clockwise, stirring them slightly. Use gentle pressure, or the leaves will break. This step is for one cup of tea.
Remove the tea leaves from the pot when they are no longer green and have lost their crispness. Once removed from the pot, store them indoors until they cool to their natural temperature before sealing and packaging. Store in a dry, well-ventilated area away from moisture.
