Then start marinating the ribs to control the moisture.
First pour in the five-spice powder, thirteen-spice powder, ginger powder, sugar, a little salt and other mixed marinade and stir evenly. Then add the freshly boiled pepper oil and the red oil boiled a few days ago and mix them all together.
Using pepper oil and red oil is an important step. The ribs marinated with oil will be bright in color and bright red when fried.
If you marinate the ribs directly with pepper powder and chili powder, the fried ribs will not only be black in color, but also have a bitter taste.
